Leap Day Curry


(K, this has nothing to do with Leap Day, but it is a fun day to have.)

Lately we've been trying different Paleo meals, they encourage them at Crossfit. I found this curry recipe on Pinterest, via my friend AJ's board. I tried it a few weeks back and it was delicious (minus the rice). Monroe ate it for 4 meals, and kept asking for more! It's a perfect Sunday meal, you can leave it in the slow cooker while you're away at the church. But if you're making it during the week, just cook it on the stove top in a cast-iron dish for about 1.5 hours.

To make it extra kid friendly (but not Paleo friendly), just add in some quartered red potatoes about 45 minutes before finishing. This way they don't get too mushy.
